"Yummy sauteed zucchini with other veggies you can find in your fridge!! Very tasty and healthy!! I sometimes add a drop of wine to give it a little more taste. Note: you can add as many vegetables as you like, but this dish can also be tossed in with pasta, if tossing with pasta, just add a lot more olive oil."

  1. Cut zucchini in half lengthwise, then slice crosswise into thin half-moons. Cut onion into large dice. Heat a large skillet over medium-high heat. Pour in olive oil, then saute onion until lightly browned. Stir in zucchini and continue to saute until zucchini is soft and lightly browned. Season with salt to taste.

I have a similar recipe for zuchinni;however, I suate onions and garlic, add sliced zuchinni top with garden fresh tomatoes and then top with any left over cheeses you have in the frig.

This is a basic way of preparing zucchini but it is dependably delicious. Just to jazz it up a little I added fresh minced garlic, a drizzle of fresh lemon juice and some chopped, fresh dill.

I had a craving for zucchini, so I started out with this recipe, I added any veggies I had in the fridge (carrots, garlic, etc) as well as 2 fresh diced tomatoes and half a can of diced tomatoes...

Delicious! I added carrot ribbons that I made with a vegetable peeler. Yum!

wonderful but make sure your pan is big enough to evenly sautee all the veggies (and not have to steam them as well!), and add a lot of salt!

I loved this recipe, although the kids don't care for it. It was quick and simple.
