  1. Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slice on a paper towel-lined plate. Let cool and crumble bacon. Reserve 1 teaspoon of bacon drippings.
  2. Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the green beans, recover, and steam until just tender, 3 minutes.
  3. Whisk together olive oil, Dijon-style mustard, vinegar, bacon drippings, and shallot in a bowl. Toss hot, steamed green beans in a bowl with the dressing and crumbled bacon, and serve.

Definitely has possibilities but was bitter - too much of a tang with the vinegar. I added a touch of sugar.

Simply DELICIOUS! I doubled the bacon since we love bacon. Did not have shallots on hand so I minced some onion and garlic and I cooked them in the bacon fat before adding them to the dressing...

We are not fans of raw onions, but I thought the shallots would be ok. It was still a little too much "onion" tasting for us - it overpowered the asparagus. I'd rather just have plain steamed ...

This was very good, kids ate it well. I didn't quite think it rated a 5 though. I might try it again in the future in case I did something wrong.
