  1. Place the chicken breasts into a slow cooker; pour in the lime juice and chicken stock. Add the garlic, thyme, pepper, and butter.
  2. Cover, and cook on Low until the chicken is very tender, 8 to 10. Stir in the rice during the last 15 minutes of cooking time.

We liked it but it was a bit bland for us so I did add a bit more of the spices to it and I used brown rice instead of white. It is one we will add to our recipe book.

This was super tasty! Next time I would not put the rice in the slow cooker though, I would cook it seperately as it was mushy, but still tasty. Will for sure be making this one again!
