"I am from the South and it is a tradition to eat black-eyed peas on New Years Day. This was a creative way that my cousin and I came up with! The folklore says that the eating of black-eyed peas brings prosperity to you throughout the new year! Enjoy! And be prosperous! Serve warm with tortilla chips."

  1. Bring a small pot of rice and water to a boil. Cover pot, reduce heat to simmer and let cook 20 minutes or until rice is tender.
  2. In a large saucepan, combine rice, peas, tomatoes and chili. Stir the mixture over a medium heat until it is heated through.

I served this on New Year's Day, but substituted 2 cans of mexicorn for the rice and water and used 1/2 jar of hot salsa. One large bowl of black eyed,pea salsa was gone.

I made this last year for new years and my friends are already asking if I will make it again for our party!

This was not good. I took it to a potluck and it was avoided like the plague. The rice was odd in salsa. And made the mix mushy and bland.

Good recipe, however, If you grew up in the South you must know that you must also have ham hock or hog jowl with those peas.
