  1. Heat the oil on high heat in a large saute pan or wok. Add the onion and cook for 1 minute. Add the egg and scramble for 30 seconds. Add the pineapple, garlic, ginger and mixed vegetables and cook for 4 minutes. Add the rice, stir-fry sauce and blend well. Season with salt and pepper and cook for 4 minutes more. Add the scallions and mix well.

This was very good, and I had great leftovers to take to work. I did feel it was missing a little zing to it, but I'm not good enough in the kitchen to figure out what to do differently:) Thanks!
