  1. Season chicken with salt and pepper. In large skillet, heat 1 Tbsp olive oil over medium high heat. Add chicken breasts and cook until browned; remove from skillet.
  2. Add remaining oil to skillet; cook onion, green pepper, garlic and rosemary over medium heat until onion is tender.
  3. Add chicken, undrained tomatoes and olives; cook 5 minutes or until heated through. Season to taste with salt and pepper. Serve over rice, couscous or pasta and garnish with low-fat feta cheese.

My family loved this! I omitted the pepper and added extra onion and artichoke hearts.Served it over whole wheat rigatoni with asparagus on the side. Delicious.

This was really good, and very quick and easy to make! The only change I made was to omit the olives, as I didn't have any in the house. Very good recipe, will definitely make again.
