  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  3. Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, applesauce, and vanilla extract. Pour noodle mixture into a 9x13 inch baking pan, then sprinkle with cinnamon. Cover baking pan with aluminum foil.
  4. Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

Exactly what I was looking for! Sweet, creamy, with a nice vanilla flavor. I sometimes add raisins. You can decrease the sugar if desired to 1/2 cup and it's still great.

not bad. This is compared to a favorite recipe from an experienced Jewish caterer though, not sure if it's fair. I really would take the time to use fresh grated apples in place of the applesau...

Mmmm... Very good and makes the whole house smell delicious but I modified it by adding 2 tablespoons cinnamon into the mix, chopped pecans, white raisins, and I had to add a little more butter ...

Best kugel ever! Would maybe add raisins as a variation and a little more cinnnamon in the middle. Wonder if brown sugar would be just as good as white sugar...not sure but will try this one...
