Schweineruckbraten (Microwave Loin of Pork)

Schweineruckbraten (Microwave Loin of Pork)

Clarence "CJ" Spencer

"This is a microwave recipe for small cuts of pork loin (1 to 2 lbs). This is a great recipe for college students who don't have a regular oven in their rooms."

  1. Pat the pork roast dry with a paper towel and perforate the meat at 1 inch intervals with a knife or fork. Insert leaves of rosemary in the perforations.
  2. Place the onion halves into a glass 9 or 10 inch pie plate. Set the meat on top of the onions so they act as a roasting rack. Pour the water over the meat and season with salt, pepper, thyme, and cumin.
  3. Cook in the microwave at full power for 16 minutes (or about 8 minutes per pound). Turn the roast over and cook for an additional 6 minutes or until the internal temperature of the roast has reached 145 degrees F (63 degrees C). Let the roast rest for about 15 minutes before carving and serving.

This is the first roast I've ever cooked in the micro - turned out perfect! I was surprised at how moist the pork was - even ate the onions. Will make again. Thx, CJ

Surprisingly good! I did not use fresh rosemary, I just sprinkled some crushed rosemary on pork along with other seasonings. SUPER easy and quick. I will surely make this again for a fast easy...

Tried this last night as I was in a hurry to get dinner on the table. Had all ingredients on hand including fresh rosemary from my herb garden. Delish and easy!

Added my favorite spice blend, and it was fantastic!

Yummy, easy, and thankful for microwave cooking.

Not just for college students. I tried it with a 3lb loin and it was fantastic.
