Combine all ingredients in a heavy large saucepan or Dutch oven. Bring to a boil over medium-high heat. Reduce heat and simmer, uncovered for 1-1/2 to 2 hours, until fruit becomes transparent and mixture is thickened. Stir occasionally. Transfer, in batches, to food processor or blender and pulse to desired consistency.
