  1. In large bowl, combine sweetened condensed milk and vanilla. Fold in whipped cream and chips. Pour into 9x5-inch loaf pan or other 2-quart container; cover. Freeze 6 hours or until firm.
  2. Scoop about 1/4 cup ice cream onto bottom of 1 cookie; top with another cookie, top side up. Press gently. Wrap tightly in plastic wrap. Repeat for remaining sandwiches. Freeze 1 hour before serving. Serve immediately. Store leftovers in freezer.
