  1. Saute celery in butter or margarine. Cook over low heat until the celery is tender.
  2. Mix in rice and beef broth. Cover, and simmer until the rice is tender.
  3. Add remaining 1 cup broth, and heat to boiling. Remove from heat. Sprinkle with 3 tablespoons minced fresh parsley. Top individual servings with croutons.

A decent basic soup to use as a starting point for creativity. The only change I made was the parsley (dried instead of fresh, since it is what I had). Thanks for the inspiration.
