  1. In a 5-qt. Dutch oven, bring spinach, broth and carrots to a boil. Reduce heat; simmer 5 minutes, stirring occasionally. Remove from heat; cool to lukewarm.
  2. Meanwhile, in skillet, saute onion and garlic in butter until onion is soft, about 5-10 minutes. Add flour; cook and stir over low heat for 3-5 minutes. Add to spinach mixture. Puree in small batches in a blender or food processor until finely chopped. Place in a large saucepan. Add cream, milk, pepper and nutmeg; heat through but do not boil.

I thought this was really good, my husband loved it and so did my 3 year old and 1 year old. The only reason I didn't give it a 5 star is that I am not sure if it is worth getting so many pans...

Great starter recipe! It needs more heartiness though. I added a rotisserie chicken-pulled apart, of course. Also some artichoke hearts (2 cans is good) and romoano cheese. I would suggest to s...

Put more carrots and spinach than it called for to get some more heft to the soup and used evaporated milk rather than cream because I had it on hand. It was fantastic!
