Chuck Wagon Chow

"To the best of my knowledge, this recipe came from the early days in Colorado...or from the cattle trails leading into Colorado. It is a cowboy recipe and the ingredients can be varied, depending on what's available. In the old days, you couldn't always find what you needed...and sometimes it's fun to vary the ingredients."

  1. Combine flour, salt and pepper in a large plastic bag. Place beef cubes in bag and shake to coat evenly. In a Dutch oven or large skillet, brown beef in oil. Add onion, green pepper and garlic; cook until peppers are crisp-tender. Stir in chili powder, oregano and reserved vegetable liquid; bring to a boil. Reduce heat and simmer, covered, until meat is tender, about 45-50 minutes. Stir in beans and corn; simmer 10 minutes or until heated through.

Good, my 1 year old loved it. Not a spicy chili. I made it in advance then put in crockpot to keep warm.

Husband liked. The kids did not. It might be more a fact that they don't care for the chuck steak then the recipe though.

Really tasty, hubby loved it, a little too spicy for the kids but will definitely make it again!

This is a delicious, hearty meal. I made mine with a mix of 15 beans, turned out well. Just cook the beans first, then cook the beef (it might not need 40-50 mins- I added the liquid and cooke...

My husband and I both LOVE this! It's easy to make and oh so delicious. As a matter of fact, my hubby requested this tonight for supper.

As is, we found it a bit bland. We substituted italian seasoning for the oregeno, upped the chilli powder to 2 1/2 tablespoons and added 1 teaspoon cayenne pepper, 1 teaspoon red pepper flakes ...

Wow - this is a simple recipe with huge taste! I sometimes spend hours combing through recipes until I find one I want to try. But I found this one when I was in a hurry and I'm so glad I trie...

My husband wouldnt even try this and he'll just about anything.

It didn't have enough spice for me, but my husband said it was a keeper. Thanks!
