  1. Place apples in a greased 1-qt. baking dish. In a small bowl, combine sugar, cinnamon and vanilla; mix well. Sprinkle over apples. Cover and bake at 350 degrees F for 40-45 minutes or until apples are tender. Uncover and mash with a fork. Serve warm.

This was far too sweet. I thought 3 tbsp of sugar per apple sounded like too much, so did 1.5 tbsp per apple--but it was still horribly sweet. Next time I would use 1/2 tbsp of sugar per apple...
