  1. In a saucepan, cook carrots in a small amount of water until crisp-tender; drain. Remove and keep warm. In the same pan, heat brown sugar and butter until bubbly. Stir in lemon peel. Return carrots to pan; cook and stir over low heat for 10-15 minutes or until glazed. Remove from the heat; stir in vanilla.

yummy! i doubled the amounts for the sauce just to make sure they didn't dry out while kept warm in the crock pot! great flavor!

Worth it. My family does not like carrots of any sort but will eat this dish on the holidays and request it for their birthday!

Did this recipe yesterday for Christmas dinner - it was an unmitigated horror - my husband absolutely hated it.

Very good, the only thing I didn't like was the lemon peel...I don't think I graded it thin enough. Next time I make it I will omit the lemon peel.

Absolutly LOVE this recipe. It is inexpensive and easy to make. Not to mention being very YUMMY!!!!!

This turned out a little sweeter than I was looking for--Added a pinch of cardamom and salt-next time will use less brown sugar and no vanilla...
