  1. Combine the first six ingredients; crumble beef over mixture and mix well. Press into an ungreased 9-in. square baking pan. Bake at 375 degrees F for 25 minutes or until no longer pink; drain.
  2. Combine the potatoes, corn, beans, onions and 1/2 cup of cheese; spread over meat loaf. Sprinkle with the remaining cheese. Bake 15 minutes longer or until the potato layer is lightly browned and heated through.

I was excited to try this new recipe. However, like other reviews; we found it a bit bland. I substituted the Mexi-corn for a small can of diced green chilies. I think the potatoes soak up too ...

Very Good!!! My family really liked it. I only made minor changes, like using chili beans instead of kidney beans and putting some diced tomatoes into the meatloaf. Nice and Filling!

I made this a few nights ago, after trying to find some way to use up some ground beef that I had. We love meatloaf around here and my husband raved about this one!

This was not my favorite dish, but that may be my own fault. I only had 1 lb. of ground beef instead of 1 1/2, but still used the same amounts of everything else. The chili powder was TOO MUCH...

Big fan of this recipe! Adds a little something something to the traditional meatloaf recipe. Also, I added a little bit of garlic to the meat, and some cilantro to the topping...a great additi...

Delicious!! Only thing I would do different next time (and there will be many next times) is to add more seasoning to the meatloaf. Otherwise, this was a huge hit. Wonderful meal by itself.
