  1. In a large bowl, combine first six ingredients. Stir in rice, chicken, green onion and green pepper. Cover and chill for 1-2 hours. Serve on a lettuce-lined platter; top with tomato, avocado, olives and chips.

Delicious.. perfect way to use leftover chicken and rice. I also used brown rice and left out the olives since I don't care for them. I think I might up the chili powder just a tad next time
