  1. In a small bowl, combine pecans, brown sugar and sour cream; set aside. Combine egg, bananas, sugar and oil; mix well. Stir in pancake mix just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Drop 1 teaspoon of pecan mixture into center of each muffin. Bake at 400 degrees F for 15-20 minutes or until muffins test done.

I just tried this recipe as is and they were OK, I think if I use it again I will put on a light crumb topping or I might mix in some dried cranberries, and it really needs vanilla. I liked that...

This recipe is delicious! It is very moist. I did add more praline topping and I also added vanilla to the batter. Will definitely use and share this recipe!
