  1. In a skillet, cook bacon until almost crisp; drain. Add onion; continue cooking until bacon is crisp and onion is tender. Stir in hominy, eggs and pepper. Cook and stir until the eggs are completely set.

Excellent recipe which I will definitely prepare again. When you add the onion, throw in a diced green pepper - it works!

This is very, very good. I have made this for my husband & myself several times. Good old fashioned rib-sticking comfort food at it's best. Great for a lazy weekend morning.

This was great. Simple and yummy. Had a can of hominy that I didn't know what to do with. My husband loved it, although I can't say it was healthy ;)
