  1. Place potatoes in a saucepan and cover with water. Bring to a boil; cover and cook until almost tender. Drain and cool.
  2. In a large bowl, combine soup, 1-1/2 cups cheese, sour cream, onions, salt and pepper; stir in potatoes.
  3. Place in a greased 13-in. x 9-in.x 2-in. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until heated through.

Very delicious and easy to make! Make sure though you use at least 8 LARGE potatoes, for I used 8 medium sized ones and I had soupy potatoes! Tasted yummy none the less--more like chunky scallo...

This was really good and liked by all. I like the creamy texture. However, I added some chives, a little seasoning salt and some garlic and it pumped it up even more (especially the chives).

Absolutely Yummy! I would add another potato or 2 and I added bacos! But still WONDERFUL!
