  1. In a large bowl, combine flours, baking powder and salt. In another bowl, beat egg, honey, milk, oil and lemon peel; stir into the dry ingredients just until moistened. Fill greased muffin cups three-fourths full. Bake at 375 degrees F for 18-20 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack.

I found these muffins to be very bland even after adding cinnamon and walnuts. I won't be making them again. The addition of a banana might make the difference.
