  1. Combine the first 10 ingredients in a bowl; cut in shortening until mixture resembles fine crumbs. Store in an airtight container in a cool dry place or freeze for up to 6 months.


  • To prepare chicken: Place 1/2 cup coating mix in shallow bowl or large resealable plastic bag. Add chicken and toss to coat. Place in an ungreased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 400 degrees F for 40-45 minutes or until juices run clear. Yield: 4 servings per batch. Editor's Note: The coating mix may also be used on pork chops or fish fillets.

Very tasty! I liked it more when I dipped the chicken in the mixture, then in egg, and then in the mixture again that way the chicken stayed really moist under the thicker crust.

I made this recipe exactly as written and I was not at all impressed. It seemed really bland and really thin. I will not be making this recipe again.
