  1. In a 3-qt. saucepan, saute carrots, cabbage, celery, onion and garlic in oil for 5 minutes. Add water, tomatoes and bouillon; bring to a boil. Reduce heat. Simmer, uncovered, for 20-25 minutes or until vegetables are tender. Stir in spinach, macaroni and pepper; heat through.

This soup was fast, flavorful and economical. Can't ask for more that that! I doubled the recipe, used Ditalini pasta (we don't like elbows; Acini di Pepe, Orzo or even Alphabets would work well...

Very nice, i used vegetable 'bouillon' cubes so that it was vegetarian. I used less pasta though, because traditional minestrones do not have much pasta in them.

This soup is very good. It's easy to make and doesn't take long.

Loved it! Left out the spinach, since we're not big spinach fans. I used a quart of beef stock I had in the freezer, instead of the water/bouillon. I'd add more stock next time to make it soupie...
