  1. Place carrots in a saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and simmer until crisp-tender, about 7-9 minutes. drain; set aside and keep warm. In the same pan, combine brown sugar, cornstarch, orange juice, ginger and nutmeg until smooth. Bring to a boil; boil and stir for 1 minute. Return carrots to the pan; cook and stir over low heat until heated through. Sprinkle with parsley if desired.

Simply delicious! I pre-cooked the carrots for 5 minutes in boiling water earlier in the day (rinced in cold water to stop the cooking process when done); then made the sauce. Put it altogether...

These were okay. I kind of liked the taste, but my husband didn't really enjoy them. He said they were a little tart. Probably because of the orange juice.

I don't like carrots, and this recipe was fantastic. I used freshly-squeezed oranges with pulp and it was quite nice. Two-thumbs up for non-carrot lovers.
