  1. Prepare rice mix according to package directions; cool. Drain artichokes, reserving marinade. Chop artichokes; place in a large bowl. Add prepared rice, long grain rice and onions. In a small bowl, combine mayonnaise, curry powder and reserved marinade. Pour over rice mixture and toss to coat. Cover and refrigerate until serving.

This is a great recipe!!! Everyone who eats this salad loves it. I occasionally add green peas just to dress it up a little more, but the salad is perfectly fine as it is written.

This is a wonderful recipe. I've made exactly as written, or added fresh peas, toasted slivered almonds, and even chopped chicken for an easy summer entree. Generous servings, never any left!
