  1. In a large saucepan, saute onion and green pepper in butter until tender. Stir in the corn, tomato, salt, pepper and cayenne. Cover and simmer for 5-10 minutes or until heated through, stirring occasionally.

A great way to dress up corn. And it was a big hit. Tasted great. Not being fans of cayenne I didn't add that. Was wonderful and will surely make this again. Thanks for posting!

A good side dish which I will make again. I used canned corn and about 1t of cayennne which gave it just enough of a kick for us. Thanks Nancy.

Very yummy side dish. I used a 10oz can of tomatoes with green chilis and omitted the cayenne, which worked really well. Thanks for sharing.

Yummy! Used left over corn on the cob, chopped Italian tomatoes, added some left over black beans & some garlic. We loved it!

Made this with fresh corn and canned tomatoes/chilis. Did 1/2 tsp of cayenne, which was spicy enough for me, but my spice-loving girlfriend said she would've been okay if I doubled it. Oh! Also ...
