  1. In a serving bowl, combine the zucchini, tomatoes and onions. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over zucchini mixture and toss gently to coat. Cover and refrigerate for at least 2 hours. Serve with a slotted spoon.

This was a nice change of pace from a traditional salad. I had no green onions on hand so I used red onions, and it was great. Will make again.

Wonderful and simple recipe. I used apple cider vinegar which i think may have made it a little bitter but the sugar cut the acidity nicely. I also added fresh cilantro and a bit of fresh dill.
