  1. In a large nonstick skillet, saute carrots in oil for 10 minutes. Add zucchini; saute 10 minutes longer or until vegetables are crisp-tender. Sprinkle with vinegar, Italian seasoning and salt; toss.

Fabulous side dish for poultry, meat or fish. The carrots give it a sweet flavor. I added two cloves of garlic along with the carrots and some pepper with the spices.

I thought this was ok but nothing fantastic. I think it was missing some flavor. Perhaps the garlic that everyone writes about would have made a big difference.

Very good and simple recipe! As suggested I added some fresh garlic, cut the cooking time by half and added some black pepper.
