  1. In a large ovenproof skillet, saute the celery, carrots, onions and garlic in butter until tender. Stir in the barley, salt and pepper. Stir in 2-1/2 cups broth. Cover and bake at 350 degrees F for 30 minutes.
  2. Stir in parsley and remaining broth; sprinkle with almonds. Bake, uncovered, 30-40 minutes longer or until liquid is absorbed and barley is tender.


  • Nutritional Analysis: One serving (3/4 cup) equals 222 calories, 7 g fat (1 g saturated fat), 4 mg cholesterol, 711 mg sodium, 35 g carbohydrate, 8 g fiber, 7 g protein. Diabetic Exchanges: 2 starch, 1 lean meat.

Not very impressive. Me and husband didn't care for it because it was too bland. I added Parmesan cheese on top and that helped a bit. But I won't make it again.
