  1. Place popcorn in a large bowl; set aside. In a heavy saucepan, combine brown sugar, water, corn syrup, butter and salt. Bring to a boil over medium heat, stirring constantly. Continue cooking, without stirring, until a candy thermometer reads 270 degrees F (soft-crack stage).
  2. Remove from the heat; stir in vanilla. Pour over popcorn; stir until evenly coated. When cool enough to handle, quickly shape into balls.

  • We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212 degrees F. Adjust your recipe temperature up or down based on your test.

A good flavor. This is the stuff that realy sticks to the fillings! I am alost concerned that they might come out. I prefered the recipe that is made with the condenced milk.

Great taste!!! I actually used microwavable popcorn, that I made a few days ago. It turned out just fine. I also only used 2 bags of it, so it was probably a lot less than 2 1/2 cups unpopped...

Oops, my fault. I let my topping go to the hard crack stage...I don't have a candy thermometer so I was attempting to eyeball it. But anyway, it still tasted pretty well, it was just very diff...

Excellent caramel popcorn balls. Some notes: I doubled this recipe and was generous in 'quarts' of popcorn. Could probably have done 5 quarts for the doubled recipe comfortably. Cooking the mixt...

So much fun, we made these one year to go in Christmas stockings and they turned out great! Don't forget to take the unpopped kernels out before mixing.
