  1. Scoop ice cream into 12 balls. Place on a baking sheet and freeze until solid. Roll in coconut. Garnish with mint if desired.

This is so cute! Just coat any flavor of ice cream, that has been shaped into a rounded ball, with coconut! If you can't get the kids to eat ice cream, maybe they will try this because they like...
