  1. In a large resealable plastic bag, combine the flour,salt and pepper. Add chicken, a few pieces at a time, and shake to coat. In a skillet, brown chicken in butter until juices run clear. In a saucepan, combine the oranges, marmalade and tarragon; bring to a boil. Pour over chicken; stir gently to coat. Serve warm with toothpicks.

I added crushed red pepper and some cayenne for heat to the orange sauce, and served this over rice. My family loved it.

These were quite good. I served as a main dish over Onion Rice from this site. My only thought would be to perhaps add a little cornstarch slurry to the sauce, as it didn't coat the chicken quit...
