  1. In a bowl, combine the egg, onion soup and cracker crumbs. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 11-in. x 7-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 30 minutes.
  2. Pour mushroom soup over loaf. Bake 1 hour longer or until meat is no longer pink and a meat thermometer reads 160 degrees F; drain. Let stand for 10 minutes before slicing.

I didn't have any crackers, threw in some corn meal instead. It's really good (probably too much salt, though). Kind of loose when you flop it into the baking pan but really moist when you eat...

My family loved it, thanks! It has a beautiful presentation as well. The only change I made was not adding brown sugar because they don't like when it is very sweet. :o)
