  1. In a large bowl, combine the tomatoes, green peppers, cheese, pepperoni, olives and onion. In a small bowl, combine the tomato juice, vinegar, oil, garlic, basil and pepper; mix well. Pour over tomato mixture and toss to coat. Cover and refrigerate for several hours. Just before serving, sprinkle with croutons.

Made this for a work lunch yesterday and it got rave reviews. It looked pretty, too! I do have to say I cheated and rather than the oil and vinegar and tomato juice I used Gazebo Room dressing....

This was not at all what we thought it would be. I think the tomato "dressing" does it in.

Made this for a work lunch yesterday and it got rave reviews. It looked pretty, too! I do have to say I cheated and rather than the oil and vinegar and tomato juice I used Gazebo Room dressing....

This was definitely refreshing and unique. Instead of tomato juice I substituted V-8 (it's what I had on hand), used cider vinegar and vegetable oil, and added 1/2 tsp salt to bump up the flavor...

This is so fantastic, great refreshing salad for summer (wish I would have found it sooner)!!

This was good but I didn't really like the croutons with it. I think next time I will add some pasta - other than that I would leave it as is.

Very tasty! I think next time I'll put more pepperoni and a little less green pepper. I did use crumbled tortilla chips instead of croutons.
