  1. In a large nonstick skillet, saute onion in oil for 2 minutes. Add rice and garlic; saute 1 minute longer. Add the next nine ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until liquid is absorbed and rice is tender. Stir in the artichoke hearts, tomatoes, peas and corn; heat through.

This was good but lacked the kick that comes with authentic Paella. I will definitely try making Paella again, but next time I will look for a different recipe.

FANTASTIC... I added celery in place of the carrots. Next time ill substitute cabbage for the artichoke, only cause I love cabbage.

I served this to company and they truly enjoyed it. I used fresh thyme and any tomatoes I had on hand. I found it took longer than specified for the rice to be cooked and no longer "crunchy"....

I just made this, with a few adjustments. Like another reviewer, I used saffron instead of turmeric and added cumin. Used 4 cups broth (2c vegetable and 2 c chicken) since it needed more liquid....

Well worth all the prep and chopping!
