  1. Place carrots in a steamer basket over 1 in. of boiling water in a saucepan. Cover and steam for 12-14 minutes or until crisp-tender. Meanwhile, combine the remaining ingredients in a small saucepan; cook and stir over medium-low heat until heated through (do not boil). Drain carrots; add sauce and toss to coat.

Very very very very mild, not "bold" at all. If I do it again I'll probably double the curry powder, and maybe substitute a little bit of chicken broth for the creamy ingredients.

great way to get carrots into your diet. spicy & sweet! my spouse pointed with his fork and gave me the "thumbs up" smile. Won't lose this one.
