  1. Cook spaghetti according to package directions. Meanwhile, in a large skillet or wok, stir-fry scallops and garlic in oil and butter for 5 minutes or until scallops are opaque; remove and keep warm.
  2. In the same skillet, stir-fry the carrots, beans and red pepper until crisp-tender. Stir in the lemon juice, parsley, basil, salt and pepper. Drain spaghetti. Add scallops and spaghetti to the vegetable mixture; toss to coat.

This was spectacular! I'm ashamed to admit I did not follow exactly, but only with what I had on hand. Which means... I happened to have 1+1/2 lb of small bay scallops that needed to be used....

I didn't prepare exactly as the recipe calls for. I used fresh zucchini instead of the green beans and used dry herbs as I didn't have fresh. I also added small baby shrimp along with the baby...

simple, light and good. easy recipe..which I love.
