  1. In a bowl, combine eggs, stuffing mix, butter, Parmesan cheese, salt and pepper. Add spinach; mix well. Shape into 1-1/2-in. balls; place in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 12-15 minutes or until lightly browned.

I recommend baking one ball to taste it before rolling the whole batch. You can adjust the flavor accordingly. I made these a day ahead and froze them. Perfect cocktail app!

I recently made these for a party and they flew off the plate! Everyone loved them! And they were so quick and easy to make. I added 1/2c. crumbled feta. DELICIOUS!!!

I love the spinach balls! I used 1 egg instead of 6 and I added 1/2 an onion. It was delicious !!!! I would omit the salt next time as the stuffing mix, margerine and parmasean cheese provide...

These are great! I even had them at my wedding reception. I also like to add Feta to mine.
