  1. Cut eggplant lengthwise into 1/2-in. thick slices. Place on a broiler pan. Brush with butter; sprinkle with salt and pepper. Broil 4 in. from the heat for 3-4 minutes on each side or until tender. Meanwhile, heat the tomato sauce and garlic powder. Drizzle over eggplant. Sprinkle with Parmesan cheese if desired.

I omitted the margarine and threw everything in the crockpot on low. The flavor was very good for such a simple recipe. Thanks for the recipe.

My mom really liked this, however, I made sure the egg plant was nicely browned while I heated it on my sauce pan. It took me more than 4 minutes on each side.

This wasn't bad at all. I put the tomato sauce and cheese on top and put it all back under the broiler to melt the cheese. I think next time I will peel the eggplant. Maybe its' just me, but the...

This was delicious and super easy. We used olive oil instead of butter and sprinkled the eggplant with herbs. Very tasty! Will definitely make again.

Eggplant didn't seem cooked all the way through, but I was glad for a quick, easy recipe. Especially good with mozzarella slices melted on top. Using the leftovers to make sandwiches!
