"I made up this recipe when I was looking for good Chinese food in beautiful Oregon. Each time I make this, I change something slightly. Leftovers heat easily in the microwave or fry pan."

  1. In a small bowl, combine cornstarch and 2 tablespoons broth until smooth; set aside. Set aside seasoning packet from noodles. Cook noodles according to package directions.
  2. In a skillet, stir-fry beef in oil. Add soy sauce; cook for 3-4 minutes or until liquid has evaporated. Drain noodles; add to beef.
  3. Stir in the corn, broccoli, red pepper, carrot, onions and remaining broth. Sprinkle contents of seasoning packet over all.
  4. Cook for 4-6 minutes or until vegetables are crisp-tender. Stir reserved cornstarch mixture and add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Sprinkle with peanuts.

very easy to make, the only thing I will do differently is add the noodles last they did get over cooked and mushy, I didn't have nuts so I added bean spouts and it still came out good

Very yummy. Even my kids ate it. I made it again and used chicken flavored ramen, left over rotisserie chicken, sliced onions, chopped broccoli, carrots and celery.

I didn't pre-cook the noodles, just broke them up a bit and put them in once the liquid was hot. It worked just fine and saved a step, and another pot to clean! I added a little more water to th...

This was great, I only made 2 small changes, I used moose meat instead of beef and I changed the peanuts for cashews. Wonderful quick and easy meal. Thank you

I used the oriental ramen noodle mix...I did cook the noodles with the simmering steak...I used a stir fry veggie mix and added 1 can of bamboo shoots...tasty... would make again.

This was very good, I used ground beef, celery instead broccoli and I added more soy sauce. The peanuts made the dish. I wil definately make this again

This recipe was delicious and very tasty. I would however, next time add the noodles the very last. Very easy by the way.

Good - didn't wow me, but it was good.

It was okay. I might have used too much cornstarch. If I make again I will used less beef broth and no cornstarch.
