  1. In a large bowl, combine the beans, mushrooms, green pepper and onion. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well.
  2. Pour dressing over bean mixture and stir to coat. Cover and refrigerate for at least 4 hours. Serve with a slotted spoon.

Yum! The vinaigrette was one of the best I've had. Just the right amount of oil, vinegar, sugar, etc. I cut back on pepper due to personal preference :D

This salad is fantastic, and really healthy for you. I omitted the mushrooms from the recipe. Next time I would probably use a bit more vinegar for more tanginess.

i used honey instead of sugar, and increased the basil and oregano to 1 tsp. each. Very tasty!

So delicious. I used white vinegar and red onion, but also added cilantro and celery. Very easy and simple recipe. My staple bean salad.
