  1. Place the potato, parsnip and carrot in a saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until tender. Drain. In a small bowl, mash the vegetables with milk, butter, brown sugar and salt.

I think that the carrot I used must have been to big, because all we could taste was the carrot. I will definately make this again, but I think I will sub and extra potato or parsnip for the car...

I didn't use carrot or brown sugar. I did add Parmesan, Italian herb seasoning and freshly ground black pepper. Fantastic!

Interesting taste combo... I doubled the potatoes, since they were smaller, as with the carrots, but otherwise kept the recipe as is. Great blend of flavors!
