  1. In a large mixing bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon and salt. Whisk the egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full.
  2. For topping, combine the flour, brown sugar and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 375 degrees F for 22-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

I made this muffin recipe with a friend this weekend. It came out really good. Instead of the instant coffee, we used a capppuccino dry mix instead. Also, the muffins came out a little burnt at...

Excellent!!! I got rave reviews! I only changed one thing. I haved the slour on the topping and added a teaspoon of instant granules to the topping as well. Mmmm...

Great base recipe. I just use a little less butter, a little more coffee, and skipped the topping (didn't crumble well for me) and used butter cream frosting instead. Either way, very good and...

Really good...made exactly as is...esp good if you nuke it in the microwave for 15-20 seconds and serve w/butter! Good for breakfast, but tastes more like dessert!
