  1. In a large skillet, cook cilantro and garlic in oil over medium heat for 1 minute. Add the potatoes; cook and stir for 20-25 minutes or until tender and lightly browned. Drain. Sprinkle with salt.

These were great. I also added green onion and cumin. The key is to add the cilantro and green onions when the poatoes are almost done so they do not cook down and taste burnt.

I kinda hate giving this recipe 3 stars because it was great with modifications, but not-so-great as written. You have to put the garlic and cilantro in near the end - once the potatoes are brow...
