  1. In a bowl, combine the corn bread mix, egg and milk just until blended. Stir in cheese and chilies.
  2. Coat muffin cups with nonstick cooking spray or use paper liners; fill three-fourths full with batter. Bake at 400 degrees F for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

These were very tasty, my family loved them! I just used cheddar cheese, and baked them in a mini muffin pan, they turned out fabulous! Thank you for the recipe!

Unfortunately I didn't really like these and woudn't make again. I just didn't think the combo was anything to rave about so I'll be hunting for a better corn muffin recipe.

These turned out moist and with just the right amount of chili flavor. I couldn't taste the cheddar as much but that's ok. I'll be sure to make them again next time we have chili.
