  1. In a saucepan, saute onion and garlic in butter and oil. Add broth; bring to a boil. Add pasta; reduce heat. Simmer, uncovered, for 10 minutes or until pasta is tender. Add the beans, tomatoes, spinach and salt. Cook 5 minutes longer or until heated through. Serve with Parmesan cheese.

This was a zip to make, and it had a comforting flavor. I added black pepper and a few other spices to zest up the broth. Next time I will use less butter and increase the amount of spinach.

As is, there is no flavor or body! I added Pesto, doubled the beans, including black beans, doubled spinach and tomatoes, added some black and red pepper. Yes I would say healthy overall, but ...
