Tortellini Minestrone

Tortellini Minestrone

"We take turns cooking Sunday meals at my church, and this soup is always popular. It's a smart way to use zucchini, and people seem to enjoy the cheese tortellini as well as the Italian turkey sausage. -Pamela Smith of Flushing, New York"

Way too sweet and tangy. If I make it again I will substitute tomato sauce for the ketchup.

This minestrone is my most requested meal when the weather turns chilly. I add 1/2 cup dry red wine. You've got to try this recipe!

This recipe always turns out fantastic. My only tip would be to make it a day before. Letting the flavors blend overnight in the fridge makes it much more flavorful. (We also omit the green pepp...

This was excellent! I would even say it's the best soup I've ever had. The sausage and tortellini make it a very satisfying meal and the vegetable mix is the best.

Pretty good recipe. I used vegetarian tofu sausage, browned in a skillet first. Adding that much ketchup (or any ketchup) to a soup kind of grossed me out though, I think in the future I'll try ...
