  1. In a mixing bowl, combine water, egg substitute, yogurt and lemon peel; add cake mix. Beat on medium speed for 2 minutes. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350 degrees F for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
  2. Combine sugar and lemon juice; drizzle over cake. Fill center of cake with strawberries.

Really, really good! I did use 3 whole eggs instead of the egg substitute and vanilla yogurt instead of plain. Lemon + strawberries = heaven. Thanks! :)

This cake doesn't raise very high and mine turned out fairly dry, though perhaps it was a little overcooked. The flavor was quite nice though and it looked beautiful.

I used 3 eggs and forgot the yogurt at the store , so used sour cream. I took it to a board meeting and there was none left! Will make this one again!

I made this recipe, and sent it to my friend's family as a thank you. I didn't taste it but they loved it. I used eggs instead of substitute so it would rise. It looked beautiful.
