  1. Cream the butter or margarine and sugar.
  2. Grate and juice the lemon. Add the lemon juice and rind to the creamed mixture. Add flour and beaten egg. Mix well.
  3. Rest dough for one hour.
  4. Put small spoonfuls on tray. Cook for 15-20 minutes at 350 degrees F (175 degrees C).

I added about 1/2 t each of vanilla and baking powder and did not let the batter rest out of impatience. They turned out quite well-very tender and light.

Although this cookie was very easy and tasty, I was looking for a crispier, thinner cookie. Probably won't make it again.

was just an ok cookie, simple, yes.....but it nedded a glaze or something.

this is ok but not my favorite it took a lot of time and wasnt worth it!!!

I liked this recipe. I tweeked it a little by adding a tad more sugar and some almond extract. I also made a lemon glaze for the top. Yum!
