These are a great way to enjoy pumpkin pie without all the guilt. The are terrific frozen as well. That little dollop of cream gives the feeling of eating something decadent and the cookie crumbs are perfect.
Not quite sweet enough for our liking. And I usually reduce sugar in most of the desserts on this site! Admittedly, the first taste was the day we made them & the second, while seemingly better tasting, was after overnight refrigeration.
Big hit at thanksgiving, it's like pumpkin pie with only the good parts. Only filling, no crust. :D
Very cute! I put them in ceramic ramekins, so they took about twice as long to bake..Overall taste was pretty good, basic pumpkin pie without the crust. The best part of this recipe were definitely the nutrition facts! Instead of gingersnaps, I used mini animal crackers and cinnamon pecans :-) Yum!
Love it! My batch took about 33 minutes to cook. I used cinnamon graham goldfish crackers instead of ginger snaps, because I had them on hand. Next time, I will cut back on the ginger just a bit. Overall, awesome; I'm happy I gave this a try.
If you need a little sweet after dinner, this is perfect! Tastes just like pumpkin pie w/o all the calories. Did not add the crushed cookies -- just topped with fat-free whipped topping.
Delicious! I love pumpkin anything...just not all he fat and calories that normally comes along with it! This is perfect! I didn't use the ginger snaps either...just graham crackers I had on hand.
